With the pandemic making it difficult to dine out, making bentos has become a global trend. New York-based chef David Bouley is aiming to revolutionize the US diet with health-conscious bentos made with nutritious ingredients. He's developing innovative bentos that combine French cooking techniques with traditional Japanese ingredients. At their core is the concept of transforming high-quality gourmet into a compact experience. The goal: to breathe new life into the struggling restaurant industry. BENTO EXPO host Marc Matsumoto links up remotely with Bouley to discuss his bento challenge.
